Appearance: Golden yellow.

Bouquet: Wonderful aged Semillon straw and toasty characters with a touch of marmalade from the botrytis.

Palate: An array of flavours are unearthed as you drink this wine, lemon butter on toast, dried orange and apricots, a twist of lime with an underlying brioche flavour.

Suggested Cuisine: An ideal wine to be served as an appetiser. Enjoy with the likes of lobster thermidor, smoked salmon or trout. Sits beautifully with richer, creamy Hors d’oevres.

General Characteristics: Medium Dry / Medium Bodied

Winemaking: The Semillon fruit selected for this style of wine has a degree of botrytis infection so as to impart the flavours associated with botrytis but without the sweetness level. The grapes were harvested at 13 - 13.5 baume (compared to 20-25 baume for Noble One). The juice was clarified prior to fermentation which took place over two to three weeks at 13 - 15°C and we retained a small amount of sweetness to balance the flavour of the botrytis on the palate.

Cellaring: A wine that has clearly lasted over ten years and with good cellaring should continue to drink well for another five to ten years.
