Region Victorian Appearance Off white light in colour. Bouquet Showing subtle floral and strawberry aromas with almond biscotti nuances. Palate Soft and creamy palate that has length and finishes with nougat flavours. Suggested Cuisine Great with Canapes and Oysters or Salmon dishes. General Characteristics Dry / Medium Bodied Cellaring The wine will develop in the bottle over the next two to three years. Vintage Conditions This wine is a multi vintage blend capturing the best fruit of each vintage. Winemaking Fruit is selected from Yarra Valley, King Valley and other premium growing areas in Victoria. Predominately Pinot Noir for depth and flavour with some Chardonnay for elegance and finesse. A touch of Pinot Meunier for some class. All base wines are fermented dry and held on lees until blending. Can be up to three years later. The final blend then undergoes a second ferment to add the bubbles to the wine. This is achieved in tank, by a process called ‘Charmat’. Wine is then left under pressure on ‘Charmat’ for one year to add complexity and a fine bead. Some of the base wines undergo a malolactic fermentation, depending on vintage conditions.
