Refreshing palate showing varietal spice and delicacy. Textured flavours balanced by crisp mineral acidity.
Vintage Conditions
A generally cool growing season with good rainfall which particularly suited the aromatic varieties.
Winemaking
Pinot Grigio is sourced both from our Yarra estate vineyard as well as well as from the upper Yarra . A small addition, 7%, of the Grigio comes from the Mornington Peninsula and 3% of Riesling fruit from the Yarra estate to add further aromatics. Fruit is hand picked and whole bunch pressed. The juice is roughly racked to both tank and cask and is allowed to ferment naturally with indigenous yeast. The cask components are stirred and topped fortnightly for 6 weeks before blending with the tank portion and bottling.
