Vintage Conditions
2011 was a very cool growing season with timely rainfall. Sauvignon Blanc was
mature and very expressive and punchy with balanced alcohol and acidity levels.
Winemaking
Estate grown Sauvignon Blanc from two sections of our Dixons Creek property. Both vineyards are cane puned, shoot thinned and hand picked. Average vine age 14 years. Fruit is whole bunch crushed and pressed and the juice is roughly racked to older casks with lots of solids. The wine ferments naturally with lees stirring fortnightly for five months before bottling.
