A soft, light wine with perfectly ripe flavours of raspberries, cherries and strawberries mingled with a splash of pink.
Vintage Conditions
Being a non-vintage wine, vintage conditions vary from season to season. This is a blend of several vintages from selected vineyards. The base wines are blended to a style – creamy, complex, fine, interesting.
Winemaking
Chardonnay for the creaminess, Pinot Meunier for spice and perfume, Pinot Noir for complexity and grace. Fruit is gently pressed to avoid any nasty, bitter flavours. The pressed juice is fermented in both tank and cask at elevated temperatures to ‘blow off’ the fruitiness. The base wines are blended each year and then over blended with previous vintage material to produce the desired flavour profile. The resultant cuvées undergo secondary fermentation to give them their fizz. The finished wine is light and mineral with texture and feel, dry and very delicious.
