VINEYARD: Sources from Humis, Heathcote Ridge and Willoughby vineyards in Northern Heathcote around the villages of Colbinabbin and Corop
APPEARANCE: Pale salmon in colour.
BOUQUET: Bright, perfumed, creamy, wild herb.
PALATE: Textural, soft, fine, morello cherry, utterly delicious.
VINTAGE CONDITIONS: 2016 was a warm dry season. Grenache ripened early with good flavour and gentle acidity.
WINEMAKING: Grenache is the predominant Rosé variety of Southern France. In Heathcote it produces beautiful charming perfumed reds and super fine pale textural Rosé. Dry and savoury, delicious with cured Salmon and all things Sashimi. Destemmed and cold pressed to extract maximum flavour and aroma with as little colour as possible. Fermented in older French casks. Left on yeast lees for 2 months with full malolactic fermentation for additional texture. Bottled in May 2016.
