Each individual fruit parcel selected with winemaker and viticulturist based on fruit ripeness and flavour profile. Multi regional fruit selection is important to creating complexity in wine style. Cool maceration of skins with lengthy warm fermentation for gentle flavour extraction, minimal handling.
