Appearance: Transparent pale green.
Bouquet: Showing tropical fruits of passionfruit with fresh cut grass.
Palate: Upfront is a fresh and fruitful palate of passion fruit and gooseberry which climaxes in a lengthy lemon & lime finish.
Suggested Cuisine: A seafood platter of freshly shucked oysters, whole prawns, moreton bay bugs, scallops on the half shell, Alaskan king crab legs & Spring Bay mussels. Served with half a tree of ripe lemons and a slow falling sun.
General Characteristics: Medium Dry / Medium Bodied
Vintage Conditions: Warmer temperatures and consistent winter–spring rains made for an early budburst. A few trucks beat the late January rains but things slowed up till we dried out in the first week of February. Perfect conditions followed as the added soil moisture kept night time temperatures low allowing the fruit to retain its natural acid. The blend was completely picked by mid February allowing us to have it on shelves for spring.
Winemaking: Semillon and Sauvignon Blanc vineyards from the Riverina are selected for their fresh fruit notes. The Semillon was pressed quickly and floated to produce very clean juice for a cool flavour-retaining ferment in stainless steel while the Sauvignon blanc was crushed and sat on skins for 3 hours before pressing hard to extract as much flavour as possible. Juice was cold settled for 3 days to allow the juice to again absorb as much flavour from the pulp as possible before racking. All juice is fermented cool to retain intense varietal characters. Wine was left on fine lees for a 4 month period before blending and bottling.

Cellaring: Made for immediate enjoyment however can be cellared for up to two years.
