Bouquet: Lifted nose of pineapple, with soft biscuit oak characters adding complexity.
Palate: Fresh citrus, white nectarine and soft stone fruits deliver a Chardonnay that is clean and fresh and full of flavour.
Suggested Cuisine: Pan-fried snapper with lemon butter Sauce.
General Characteristics: Medium Dry / Medium Bodied
Vintage Conditions: Good winter rains followed by a warm growing season led to good yields of fruit. A hot beginning to the harvest period accelerated the ripening with frantic harvesting ensuing to pick the fruit with the ideal flavour spectrum.
Winemaking: Fruit classification was based on those vineyards showing flavour expression characteristic of high quality. Healthy berries profiling melon and pineapple were ideal for this wine style. King Valley fruit was sourced to provide structure and freshness in the blend. All fruit is harvested in the cool of the night with some parcels being handled oxidatively to express riper and cleaner flavours. Warm fermentation and extended lees contact are employed to give the wine full flavour and structure. Post fermentation this wine was left on lees and staves for 7 months for the oak to integrate with the fruit flavours.
