APPEARANCE: Pale salmon pink
BOUQUET: Delicate, brioche, classic strawberry and peach, gently aromatic.
PALATE: Dry, textural, creamy, soft with good depth, fine flavour.
VINTAGE CONDITIONS: 2016 was warm and dry until the end of January where we received excellent rain and a mild but early finish to vintage.
WINEMAKING: Fruit is harvested and pressed immediately. We are looking for lots of flavour in the juices. The pink juice is settled overnight and racked to small casks and allowed to ferment with indigenous yeast. The casks get a little stirring of lees at the end of fermentation and undergo complete malolactic fermentation to give creaminess and complexity.

CELLARING: Drink now or keep for 2-3 years in a good cellar
