Vintage Conditions
In 2011 we experienced a cool growing season and good rainfall. Fruit was
selected both on the vine and over the sorting table to ensure perfection. Fruit
was mature and expressive at balanced alcohol and acidity levels.
Winemaking
Fruit is sourced from four estate vineyards planted in 1987, 1990, 1994 and 2002. The fruit is hand picked, hand sorted and destemmed to six tonne open fermenters. Fermentation proceeds naturally with ambient yeast. After 21 days of maceration and fermentation, the wine is carefully drained to tank and allowed to rest for 24 hours before being racked via gravity to French oak casks for 10 months.
