VARIETY: Cabernet Sauvignon 100%
REGION: Yarra Valley
APPEARANCE: Deeply coloured, some garnet.
BOUQUET: Highly fragrant, blackberry, cedar, cassis and earth.
PALATE: Full and plump, pure cabernet, sweet dark fruits, integrated savoury tannin, textural, urbane.
VINTAGE CONDITIONS: The 2013 growing season has been the quiet achiever over the last 5 years of vintages. The wines have taken a little more time but they are very classical Yarra Valley styles. Mid autumn ripening, lots of time for tannin development, beautiful aromas and flavours at moderate alcohols.
WINEMAKING: Fruit was hand picked from our A1, A2 and D2 vineyards planted in 1971, 1987 and 1991 respectively. The fruit undergoes natural fermentation, and once fermenting is kept at a minimum of 25°C then left on skins for up to 18 days. The wine is then pressed, settled overnight and gravity filled to new and used casks where it matures at 16°C for 15 months.
