VARIETY: Cabernet Sauvignon 87%, Sangiovese 13%.

APPEARANCE: Intense ruby with purple highlights.
BOUQUET: Potent and complex on the nose with spicy notes that mingle with aromas of black current, smoke, and balsamic nuances.
PALATE: Tastes of cherries, plums, liquorice, and rosemary. Mouth filling and elegant with lots of plumpness and texture. The oak perfectly fused in leaf, wild herbs and ripe fruit.
VINTAGE CONDITIONS: Mild season, good early rain, quite dry from mid January to harvest. Very low crops of incredibly intense fruit.
WINEMAKING: Three distinct fermentation styles with the components. 100% whole bunch Cabernet Sauvignon fermented in open 7T pots for 20 days, lots of foot work. Traditional destemmed and crushed Cabernet with frequent pump overs and a 30 day maceration. Sangiovese 90% whole berry, 10% whole bunch, lots of foot work, 15 days on skins.
WINE ANALYSIS: Alc/Vol: 13.5 % pH: 3.70 TA: 5.5 g/L
CELLARING: Drink now or keep for three to four years in a good cellar.
