Vintage Conditions
Fruit is sourced from our 40 year old Murphyï¾’s vineyard on Wilderness Road.
The vineyard was retrellised and retrained in 2003. The soils are free draining sandy loam. Utmost care is taken with cane pruning, shoot thinning and canopy management to provide good air circulation and sufficient leaf area to protect from the fruit from sunburn.
Winemaking
All fruit is hand picked and hand sorted. Destemmed fruit, crushed fruit and whole bunches were gently pressed separately. The juice parcels were settled for 10 days and then yeast was added. Cool fermentation occurred at 14ï¾° - 17ï¾° C. Post ferment lees were stirred for 3 months. After this time the wine was chilled to -3ï¾° C, racked, fined and filtered once to bottle.

Alc/Vol : 11.5 % pH : 3.03 TA : 4.9 g/L
Cellaring
We have consciously made a young, racy style of wine with lower acidity that can be enjoyed in its youth but will develop further in the bottle in a good cellar.

Enjoy with fresh foods. Try with freshly shucked oysters, classic fish and chips or fresh garden salad.
