Bouquet
A elegant wine showing aromas of lemon and lime with soft hints of honey and lanolin.
Palate
The palate shows lovely varietal definition with flinty acidity giving way to lemon curd.
Vintage Conditions
Were highlighted with warm days and mild nights and favourable dry conditions. This allowed fruit to reach opportune physiological ripeness producing fruit of the highest quality.
Winemaking
Fruit was sourced from our Murphy Vineyard planted in the mid 60’s on the acclaimed alluvial sandy loam soils. Fruit was picked in the cool of the morning by hand and transported to the winery in small 10kg
buckets. 100% destemmed, crushed and settled overnight. The juice is racked and a selected yeast added for primary fermentation in stainless steel. Fermentation temperatures are maintained between 14-16°C to retain pristine fruit characters. Post fermentation the wine is prepared for early bottling.

Alc/Vol : 11.5 % pH : 3.1 TA : 6.5 g/L
Cellaring
Ready for immiediate enjoyment but will blossom with further maturation in the next five years.

The perfect accompaniment to fresh seafood. Try with Lobster Thermidor.
