Appearance
Medium straw colour with a good green edge.
Bouquet
Fresh, rose petal nose with faint citrus aromatics.
Palate
Full flavours with some citrus zing. Soft, elegant and slightly sweet with soft acid balance.
Vintage Conditions
After a cool wet growing season, it finally dried out in January to produce a classic Hunter vintage. Whites are elegant, flavoursome and have good acidity.
Winemaking
The 3 main varieties, Semillon, Chardonnay and Verdelho, are picked at slightly higher sugar levels so that we can stop the fermentation at a point where there is good fruit flavour, some sugar and balanced acidity. The fruit is whole bunch pressed. A combination of fermentation in both older oak casks and stainless steel helps build texture while retaining freshness. The resultant wines are medium weight and have a flavour sweetness and feel about them that makes them balanced and gluggable.
