Vintage Conditions
After a cool wet growing season, it finally dried out in January to produce a classic Hunter vintage. Whites are elegant, flavoursome and have good acidity.
Winemaking
The two main varieties, Semillon and Verdelho are picked at a range of sugar levels to give complexity and texture. The Semillon giving the citrus backbone, the Verdelho contributing some mid palate flesh and overall complexity. The other varieties like Chardonnay and Sauvignon Blanc add to the feel of the wine without dominating. The fruit is whole bunch pressed upon arrival to the winery. A combination of fermentation in both older oak casks and stainless steel helps build texture while retaining freshness. The resultant wines are light and mineral and have a texture and feel about them that makes them dry and very delicious.
