Winemaking
The fruit was hand picked ( from our Murphy’s Vineyard ) once desired maturity was reached. Once harvested. The fruit was transported to our winery for immeidiate pressing. The juice was roughly racked post cold settling to stainless steel. Fermentation was carried out by selected yeast strains, this helped retain freshness and aroma.
