Vintage Conditions
The 2010 - 2011 growing season saw our earliest bud burst for sometime. Good rainfall during the growing season gave ideal conditions for the development of quite exotic Riesling flavours. Fruit was hand picked on a "bloody cold" morning.
Winemaking
Fruit is destemmed and gently pressed with all juice being included. Cold settling for 24 hours and then racking and inoculating with a selected strain of yeast. Here it was allowed to complete fermentation until the balance of acidity, mouthfeel and extract was just right. The wine was then sulphured to stop the fermentation, stabilised and bottled.
