REGION: Yarra Valley
APPEARANCE: Deep red with purple edge.
BOUQUET: Gently leafy, bright fruit, violets, black current.
PALATE: Rich, sweet dark and red fruits, layered tannins, charming, restrained power.
VINTAGE CONDITIONS: We thought 2012 was an exceptional year. 2013 is proving to be something very special also. Quite a warm season but mild weather in late autumn gave good colour and tannin development, beautiful aromas and wonderful concentration at moderate alcohols.
WINEMAKING: Fruit is sourced from carefully selected parcels of Cabernet Sauvignon grown in the Yarra Valley. Fruit is harvested to achieve a balance of fruit freshness, structure and ripeness. Grapes are destemmed and crushed into both static and rotary fermenters. Two weeks fermenting on skins prior to pressing and racking to barrel. 10 months in French oak.
WINE ANALYSIS: Alc/Vol: 13.5% pH: 3.46 TA: 6.1g/L
CELLARING: Although made for immediate enjoyment, this wine may be cellared for three to five years.
