Appearance: Off white in colour with a hay straw hue.
Bouquet: Vaguely aromatic with freshly cut straw and nougat notes.
Palate: Aromatic, firm and crisp palate with sweet-spiced bosc pear flavours.
Suggested Cuisine: Linguine con scampi e pomodoro fresco or Funghi Porcini fritti.
General Characteristics: Dry / Medium Bodied
Vintage Conditions: Fresh early January rains prepared vines for what was to be a mild & then dry Riverina vintage. The cooler temps allowed for great depth in pungent fruit aromas and allowed the retention of natural acid in most varieties. Quality is well above average.
Winemaking: 3 Italian varieties planted by the De Bortoli family, were harvested together on the same day & into the same tank. Blend of Arneis, Pinot Grigio & Vermentino. The fruit of these 3 varieties were pressed together and the juice allowed to settle for 1 day before racking to fermentation. Fermentation lasted 9 days & the resulting wine left in this tank on lees for 5 months to let the aroma's and textures come together.

Cellaring: This wine will develop in the bottle over the next three to five years.
